Cheats Vegetable Samosas #MeatFreeMonday

Samo-so so good! 

Meat free Monday this week is all about getting the kiddos involved...Elsie actually made these cheats vegetable samosas all by herself...I even let her use the gas hob independently (off course I stayed very very close by!). This recipe is quick, easy and foolproof, what more could you want for a Monday!

You need (makes 6) 

3 Tortilla wraps 
1 full bowl of frozen mixed veg (or leftover veggies chopped small would be fine) 
1tbsp Mild curry powder
2tbsp Garam Masala 
flour and water paste (to seal the samosas)

Use more or less spice depending on your personal taste.

Mix up a paste using a spoon of flour and add warm water (a teaspoon at a time) until you get a gloopy glue like mixture. It should be thick, and maybe not quite as lumpy as mine, but lumpy is fine and this paste worked perfectly fine!

Heat a little oil in a pan (we used a deep pan to stop any oil spitting at Elsie) and add the veggies, saute until softened and then add your spices, cooking for a further couple of minutes until the veggies are all coated and you can smell the spices. 

Take off the heat and transfer to a bowl to cool. In the meantime, cut the tortilla wraps in half. Elsie used a pizza cutter but you can use a knife, scissors, anything you want!

Spoon the veggie mixture into a triangle in the middle of the tortilla wraps (as shown below) and using the back of a spoon, pastry brush, fingers...anything goes!...seal the samosas along the edges.  I highly recommend you watch this video on our Instagram highlights of Elsie making and folding the samosas!. But basically seal the top edge and fold one side over, then seal the top side once again and fold over the side left over, then seal along the side edge. 

Once they are all sealed, place on a piece of greaseproof paper and cook in a preheated oven for about 10/15 minutes. Turning halfway through cooking until they are golden brown and crispy. 


Serve with Indian dips for an easy lunch or as a side alongside a yummy veggie curry, like this sweet potato and coconut curry.
