Slow Cooker 5-a-day Veggie Tagine and Fruity Cous Cous #MeatFreeMonday

I'm really big on meat free meals lately, I really want to cut down our intake to just one or 2 meat meals a week by the end of the year. I always thought that veggie meals would be boring and, well, samey. How wrong was I! I've probably eaten more delicious food in the last couple of months than I have in my life! If you are new to meat free meals, why not dip your toe in and try meat free Mondays for a few weeks first? This veggie tagine recipe is great for using up the last of your veggies, there is no veg that you couldn't put in here, and the fruity cous cous is just delicious and adds a sweetness that my kiddos couldn't say no to!

What you need:

oil of choice
4 carrots
6 new potatoes
3 onions
2 peppers
2 courgettes
1 tsp each ground cumin, paprika, cinnamon and mild chilli powder
400g can chopped tomato
2 tsp honey
250g couscous
Pinch of paprika
300ml vegetable stock
125g ready-to-eat apricots, roughly chopped
50g raisins

Roughly chop all the veg and chuck it onto a baking tray with a drizzle of oil over it. Roast, on gas mark 6, for 20 mins until tender.
Meanwhile heat some oil in a pan and fry the spices until the start to sizzle. Add the tomatoes, honey and half a can of water. Simmer for a couple of minutes before transfering to the slow cooker, along with the veggies. Cook on low for 4 hours.

Before serving make up your fruity cous cous, by putting the dried cous cous, raisins and apricots in a bowl with the vegetable stock. Leave for 10-15 minutes until fluffed up and all the water has soaked.
