Strawberry Cupcakes | Cooking With Kids

This week we have been getting our bake on for the Kids Make and Bake Club, when I asked the girls what they wanted to do Elsie told me cakes! Evie elaborated princess cakes (and chose some super cute princess cupcake cases) and Ellie really wanted to make strawberry cupcakes. I thought that some Strawberry and Vanilla Buttercream Cupcakes would be perfect for the Kids Make and Bake Club...

What you need (makes 6):
1 cup plain flour
1/2 tsp baking powder
2 tbsp whole milk
1/4 cup butter
1/2 cup sugar
1 egg
1 punnet of strawberries
Shop bought buttercream frosting (or you can make your own)

Incase you missed that...

Start of by helping an adult to puree some strawberries, the amount you will need will all depend on the size of your strawberries but you want to end up with at least 3 tablespoons of puree. Add the milk and vanilla essence and whisk together. Set aside for later.

Cream the butter and sugar, add the egg and mix again, add half the flour and baking powder and combine. Add the strawberry mixture and stir until it all just starts to combine, now add the rest of the flour.

Divide the mix among the prepared cupcake cases. Bake in a preheated oven, gas mark 4, for 20-25 minutes.

Cool completely before using a piping bag to pipe on the frosting and finish by topping with a halved strawberry.
