Tuna and Veg Fishcakes | Cooking with Kids

Are you fed up of throwing the leftovers away? Well you have come to the right place this recipe is perfect for using up the weeks leftovers! We used mash and veg from a previous meal, and some stale bread for breadcrumbs, all of which would have gone in the bin, but instead we turned them into these yummy homemade tuna and veg fishcakes and they were so yummy, the monsters even wanted more!

What you need:
Left over mashed potato (around 3 or 4 cups)
150g canned tuna
1 cup leftover veg (peas, sweetcorn and cubed carrot works well)
1 egg
2 slices of stale bread

In case you missed that, combine the potato and tuna in a bowl. Stir in the veg and then beat an egg and add it to the mix, making sure to combine completely. 

Use a food processor to make breadcrumbs from 2 slices of bread, then toast until golden under the grill.

With a spoon of mixture at a time, make a patty shape and coat in breadcrumbs. 

Heat olive oil in a frying pan and cook until each side is golden (3-5 minutes each side.)

Serve with a side of yummy baked beans.
