Caramel Egg Crispy Cakes | Cooking With Kids

I have said before my monsters are marshmallow OBSESSED! They have been nagging me for ages to make some marshmallow crispy cakes so yesterday we made these yummy Galaxy caramel crispy cakes...

What you need: (makes 12)

1/4 cup butter
1 bag Marshmallows
5 cups of Rice Krispies (or similar cereal)
1 bag of small chocolate eggs
Easter candy sprinkles
1 bag of Galaxy caramel eggs (cut into halves)

Melt the butter in a microwave safe bowl, add the marshmallows, stir and put in the microwave for another 2 minutes until they are melted too. Stir in the rice crispies and chocolate eggs.

Line a baking tray with greaseproof paper and spoon the mixture into the tray squishing down as you go to make sure it all sticks together! Top with the halved caramel eggs making sure you push them into the mixture to make sure they stick! Sprinkle over the sprinkles and leave to set for a couple of hours before cutting into squares.

We had some leftover mixture so made them into crispy cake lollies. We also made sure that we wrapped some up in non stick paper and tied it closed with some cute Easter ribbon for the monsters besties!
