Terry's Chocolate Orange Cheesecake | Recipe

If you were a reader last Christmas you may remember that I shared a Chocolate Orange Shortbread recipe. Chocolate Orange, specifically Terry's Chocolate Orange is a flavour that really reminds me of childhood Christmas' so this year I have been sat thinking about what recipe I could share this year and I went with this yummy cheesecake...

You will need:

150g digestive biscuits (crushed) 
40g butter (melted) 
3 tbsp caster sugar

350g soft cheese
4 tbsp caster sugar
150g Icing sugar
Juice from 1 large orange 
Zest from 1 large orange 
Terrys Chocolate Orange

First make the base by combining the crushed biscuits, sugar and butter in a bowl and press into a loose base cake tin. Pop in the fridge until needed. 

Combine the soft cheese, both sugars, orange juice and zest in a bowl (you may need to add more icing sugar to thicken up the mixture)

Pour the cheesecake topping on top of your biscuit base and pop in the freezer for 1-2 hours to set, when almost set arrange the chocolate orange on top and grate some of the remaining chocolate orange across the top.
