Sweet Potato and Tuna Fishcakes | Cooking With Kids

During half term the mini monsters had a go at making these yummy sweet potato and tuna fishcakes, they did swell and did almost all the recipe themselves! 

What you need:
2 sweet potatoes 
150g Tuna (drained)
2 spring onions
1 egg
2 slices of stale bread

First of all peel, chop and boil your potatoes until soft (around 15-20 minutes).  Whilst the potatoes are boiling break up 2 slices of stale bread and pop into a food blender, whizz until you have lots of breadcrumbs then pop on a baking tray and put under a hot grill until golden brown, put on a large plate for later.

In a bowl snip the spring onions up and mix with the tuna, pop to the side until you potatoes are ready.

Once your potatoes are cooked mash and scoop into the bowl with the tuna mix. Give it a mix and pour in the beaten egg, mix well.

A spoon at a time roll into a ball and then flatten with your hands and pop onto the breadcrumb plate covering the whole of the fishcake. 

Heat olive oil in a pan and fry the fishcakes for a few minutes each side and serve with your favourite dip for a easy lunch or with homemade potato wedges and beans for a teatime treat!
