Slimming World Friendly Goulash

The inspiration for this recipe came from Jamie Oliver's 15 minute meals, I made a few tweaks to his original recipe to make it completely syn free!! 

What you need:

2 peppers (sliced)
1 onion (sliced)
3 carrots (sliced) 
2 Fennel bulbs (sliced)
1 apple (sliced)
2 teaspoons Paprika
2 garlic cloves
5 bay leaves 
3 tablespoons balsamic vinegar
750ml pasatta
bag of rocket leaves 
juice from 1 lemon
Pork medalions (I used pork steaks as they were cheaper, I cut ALL the fat from them to                                                       make sure they were syn free!!)

Rice (to serve + extra paprika)

Saute the peppers, onion, carrots, fennel and apple for a couple of minutes then cover in parika and stir well.
Add the garlic and the bayleaves.
Start cooking your rice.
Season the pork and put in a HOT pan cooking for 2/3 minutes on each side until cooked to your liking.
Add the balsamic vinegar and pasatta to the veg mix and stir regularly.
For the last few minutes of cooking the rice cover the top of the rice with paprika.
Season the rocket with a little salt and the lemon juice adding 3/4 of it to the veg mix before serving.
Add the rest to the side of the plate.


This is a real quick meal, Jamie Oliver included it in his 15 minute meals it took me around 20 minutes (I had already prepped everything so I was ready to go!)
