Blueberry and Lemon Scones | Cooking With Kids

Scones are such an easy bake for kids and the monsters have been obsessed with making scones ever since they were introduced to our easy recipe for cheese and chive scones at the beginning of summer. I wanted to make something a little different (as nice as they are there are only so many cheese scones one can eat!) We had some blueberry's hanging around in the fridge so I decided to on some summery blueberry and lemon scones, perfect for a summery snack. The basis of this scone recipe is as simple as the savory scones, making it a great recipe for cooking with the kids.

What you need:

100g flour
1/2 teaspoon baking powder
1 medium spoon of butter
Handful of blueberry's
Zest and juice from 1 lemon
Milk (just enough to bind all the ingredients)


equipment: scales, mixing spoon, mixing bowl, juicer, grater, round cutters, baking tray, silicone brush, jug

Weigh out the flour empty into a bowl, add the baking powder and give a little stir. Next, add the butter, and get ready to get messy! 

Use your fingers to rub the butter and flour together, keep going until it looks like crumbs.

Next grate the zest and add it to the bowl, juice the lemon and add that too, give it a good stir and then add the milk, a little at a time, until you get a soft dough. 



Flour your surface and empty out your dough, pat out the mixture and cut out rounds approx 2cm thick. Pop on a lined baking tray and brush with milk, before baking in the oven for around 15-20 minutes in a pre heated oven, gas mark 7.

Once they are cooked allow to cool a little before halving topping with your favourite jam (may I highly suggest some lemon curd!)
