Chicken and Chorizo Tray Bake with Mediterranean Vegetables and Rice (Slimming World Friendly)

I have mentioned before how much I love chorizo, we had some left over last week, along with a few leftovers hanging around in the veggie drawer so I decided to add a tray bake to our weekly menu, it used up all of the veg that was going to be thrown out and all it cost me was the price of some diced chicken and an aubergine!


To make this dish you will need

500g diced chicken
100g chorizo
2 peppers
1 courgette
1 aubergine
10(ish!) cherry tomatoes
handful of  parsley
Olive oil or Frylight spray

To serve: chopped toms with garlic and herb, white rice

This is almost so easy I can hardly call it a recipe! Chop all of your veg and chuck it in a roasting tray, add the chicken and chorizo, top with hand shredded parsley and a good glug of olive oil then all you need to do is throw it in the oven gas mark 7 for 45 minutes.

Serve on top of white rice. If you have a fussy 'I cant eat rice dry' kinda kid (like my Ellie!) top the rice with chopped tomatoes first!
