This is the perfect recipe for kids to help with depending on their kitchen skills adapt by pre-peeling the veg, maybe you will need to grate it too, either way children of all ages and skills, will be able to mix all the ingredients together and make these yummy veggie puffs.
To make 6 of these yummy lunchtime snacks you will need:
1 cup spiralised or grated carrots
1 cup spiralised or grated courgette
1/2 cup diced onion
1/2 cup milk
1/4 cup grated Parmesan cheese
4 Tablespoons flour
Pepper and herbs to taste
Beat the eggs in a separate bowl and add the pepper, stir in the milk, cheese and herbs then add the flour and beat well to make a batter.
Stir in the veggies.
Heat olive oil in a large pan and drop spoonfuls of mixture into the pan, and cook until golden brown on both sides. An older child may be able to do this, but I'm such a scaredy pants I did it myself!
Serve warm with a side of baked beans or by themselves.
