I am always keen to find puddings that are super quick and really easy to make, this recipe covers both of those, this banana bread with fudge is guaranteed to be in your tum in less than 5 minutes!
1 tbsp butter
1 egg (lightly beaten)
1 tbsp milk
3 tbsp plain flour
3 tbsp brown sugar
½ tsp baking powder
A couple of chunks of your favourite fudge
Icing sugar (to dust)

Put the butter into a mug (or ramekin) and microwave for 10-15 seconds until melted. Whilst the butter is melting mash a banana.
Next, Pour the beaten egg and milk into the mug of butter and combine with a fork. Add the mashed banana and continue stirring until mixed through.
Finally, add the flour, sugar and baking powder into the mug and, you guessed it, stir until it is mixed through. Place in the microwave and cook for 50 seconds. Whilst the cake is cooking chop your fudge into mini chunks. Remove the mug (carefully) from the microwave and top with the fudge, put back into the microwave for another 10-15 seconds. The pudding should be well risen but still gooey in the middle.
If still undercooked, cook it in 10-second bursts until you get the consistency you desire.
