To end our rainbow theme this week we got our bake on and made these yummy Coconut Rainbow Biscuits!
What you need:
100g plain flour (plus extra for dusting)
50g desiccated coconut
1 medium egg
Dash of milk (if needed)
Rainbow coloured icing pens
Beat the butter and sugar in a bowl until pale and creamy. Add the flour, coconut and egg until dough forms, you may need to add a drop of milk to combine it all. Roll out the dough onto greaseproof paper and chill for 30 minutes. Using a large round cutter, cut into your dough, then with each circle you have cut in half, then using anything you can find small and round to cut into the bottom of you semi-circles to form a rainbow shape, sorry I don't do a very good job of explaining, the photos below should help you!
With the last of the leftover dough, why not make some clouds? We used a cheap stainless steel flower and squeezed it inwards to make a cloud shape (see photo below) and attached our clouds to the bottom of our rainbow shapes.
Bake in a preheated oven, gas mark 4, for around 10 minutes or until lightly golden. Leave to cool completely before decorating with your icing pens.
These were the best biscuit I have ever made, soft but still that crunch on the outside! And just the right amount of coconut! Yum!
