Bourbon Biscuit Birthday Cake | Recipe

It was Deans birthday yesterday and I always try and make him a cake that he will like (well he would like any cake to be honest!) and right now he is obsessed with bourbon biscuits! He has had one of the chocolate box cakes  when he was eating a million Kit Kats a day (you know Kit Kat edged and piled up with Malteasers etc on top) and a Haribo cake when he was a big kid and eat a bag of Haribo a night...so its a bit of a tradition you see!



What you need:
50g Cocoa Powder
6tbsp BOILING water
125g Butter (non salted) at room temperature
250g sugar
4 eggs
300g plain flour
1 pack of bourbon biscuits 
35g Milk chocolate (to drizzle) 

I have used these recipes from Mary Berry and She Who Bakes for inspiration for this bake.

Put the cocoa in a large bowl, add the boiling water and mix until smooth. Add the butter and beat together until smooth, then stir in the sugar.

Now add 1 egg and a bit of flour a bit at a time until all eggs and flour are incorporated into the mix.

Use a blender to grind 3/4 of the biscuits and then fold them into the mix.

Spoon the mix into your baking tray and break the remaining 1/4 of biscuits onto the top of the mixture.


Bake in a preheated oven (gas mark 4) for around 25-35 minutes. 

Leave the cake to cool and then melt the chocolate and drizzle over the top. 

Last of all turn off the lights, light the candles and sing your best version of Happy Birthday!
