Chicken Jambalaya. Slimming World Friendly.


We love this meal, it is this recipe that got Ellie eating rice, after years of 'not liking it!' It can also be eaten cold and is great to enjoy as a lunchtime or picnic treat. Oh did I mention its syn free if you are following Slimming World you can eat as much as you like!! 

What you need:

2 tbsp olive oil
250g rice
4 chicken breasts (diced)
2 celery sticks (diced)
2 peppers (chunks)
12 cherry tomatoes (halved)
15g fresh root ginger (grated)
1tsp paprika
1/2 tsp turmeric
1/2 tsp mixed herbs
150ml chicken stock 

Cook the rice as per packet instructions, meanwhile heat the oil in a large frying pan brown the chicken for around 5 mins until browned. Then add the celery and pepper, and cook until softened, add the ginger, paprika, turmeric, herbs and stock and cook for 5 minutes until the stock has almost gone.

At some point the rice will be done, drain with a sieve and put to the side. Chop the tomatoes and put them in with the chicken mix, add the rice and mix the ingredients before stirring.


Why not try...

Adding chopped pork, chorizo and/or prawns? Or give it a bit of an extra kick by adding chopped chillies!
