Cheesecake Brownie Bites.

An after tea treat today, because well just because! 


What you need:

Brownie Mix:
4 Eggs
1 1/4 cups Cocoa
1tsp Salt
1tbsp Coffee Granules
2tsp Cold Water
2 1/4 cups Sugar
1 cup Butter
1 1/2 cup Self Raising Flour

Cheesecake Mix:
8oz Soft Cheese
3tbsp Sugar
1 Egg Yolk

Preparation:
*Mix the coffee granules and cold water to make a thin coffee paste.
* Melt the butter

First you need to make your brownie batter by whisking the egss, cocoa, salt and coffee paste together.
Stir in the sugar and melted butter.
Fold in the flour (a little at a time).
Set aside.

To make the cheesecake filling combine all 3 ingredients and stir together.

Grease your muffins tray (or silicone cases) and half fill each with some brownie mixture, top with a spoon of cheesecake mix and another layer of brownie mix.



Pop in oven gas 4/5 for 20-30 for large muffins or 10-20 minutes for mini muffins.

Leave to cool completely on a wire rack.
