Slimming World Friendly Spinach And 3 Cheese Canelloni

One of our 'new foods' this week was Ricotta (which actually was nicer than I was expecting, though i'm not sure exactly what I was expecting but hey!)


You will need: 

Frylight
250g bag of Spinach
1/4 teaspoon Nutmeg
1 Onion, sliced/diced
2 Garlic Cloves
2 tins Chopped Tomatoes
1 Bay-leaf
1 tablespoon Dried Basil
250g Ricotta (15 syns)
1 Egg, beaten
2 teaspoons Parmesan (5 syns)
Cannelloni, approx 14 tubes
2 Mozzarella Balls, sliced (10 syns)

Spray your pan with frylight and empty spinach into the pan sprinkle with the nutmeg stir through and leave to cook down whilst you prep everything else.
Once the spinach is ready Place in a bowl and set to one side to cool a little.
In the same pan (no need to wash) spray a little more fry light and add the onion and the pressed garlic cloves and cook until softened. 
Add the chopped tomatoes the bay-leaf and the basil and stir through, bring to the boil then let simmer for 20 minutes.
Going back to your bowl of spinach and squeeze the moisture from the spinach (KEEP THE WATER YOU WILL NEED IT IN A MO!) then chop it all up and put back in the bowl along with the ricotta the egg and the Parmesan, combining all the ingredients with a spoon.
Now you can either use a piping bag, or like me (I dont have one!) fill a sandwich bag with the cheese mixture and cut a corner of!,  whichever you choose to use you need the pipe the cheese mixture into the cannelloni tubes and lay them in a oven dish. 
I wont lie this did get messy using a sandwich bag!
Cover the filled cannelloni with the tomato sauce and then top with the sliced mozzarella, throw in the oven for between 35-40 minutes.

Use the Ricotta as your Healthy Extra A and use 4 syns

Use the Parmesan as your Healthy Extra A and use 6.5 syns

Use the Mozarella as your Healthy Extra A and use 5 syns.

(Maybe a fellow Slimming Worlder can tell me do I have to automatically use the LOWEST syn as my HEX A or is it cheating to syn the lowest and use the highest synned as my Healthy Extra?) Does that even make sense?! I know what I mean!!!
