Tex Mex Veggie Chilli

Yum Yum Yum YUM!!


What you need:

Frylight
1 large red chilli (or more if you prefer, Deans not too keen on spice so I used less!) de-seeded and finely                              chopped 
1 large onion, chopped
2 large garlic cloves
1 red pepper, chunks 
1 orange pepper, chunks
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1 teaspoon paprika
500g Quorn mince
1 can Chopped tomatoes (pref. with chilli and garlic, or I used plain chopped and a grind (or 10!) of my                                                garlic and chilli grinder!!!
500g passata with herbs
1 can kindney beans (drained)
300ml cold water

Rice to serve


  • Spray pan with Frylight and add the chopped chillies, onion, garlic and peppers, fry for around 5 minutes or until softened
  • Sprinkle the cumin,cinnamon and parika and cook for 2 minutes strirring wel
  • Add the Quorn,  tomatoes, passata and kidney beans along with 300ml of cold water, bring to the boil then cover and simmer for 20minutes
  • Serve with rice

  2. Oh I love a veggie chilli - I will use this one from now on! I use all the same ingredients but I cheat with a packet for spices and herbs - bet they are full of rubbish though! Thanks for sharing this lovely! x

    1. i love having all of these herbs and spices in my cupboard, completly changed the way i cook! The one thing i loved about Slimming world was that it pushed me out of my cooking boundaries.
