Slimming World Friendly Chicken, Bacon and Veggie Loaded Pasta

Syn-free tea? YES PLEASE!!


What you need:

200g Pasta
Frylight
2 chicken breasts, diced
4 slices bacon, chopped
1 red onion, chopped
4 cloves garlic, finely chopped
1 courgette, cut into chunks
1 carrot, sliced
1 yellow pepper, cut into chunks
4 mushrooms, sliced
8 cherry tomatoes, halved
400ml passata
250ml chicken stock
splash of balsamic vinegar
Optional
Cheese to top (Slimming Worlders you can either syn it or use your HEx A) 

Preheat oven to 200c 
Add onion, garlic and bacon and brown for 2 minutes
Add all other vegetables and cook for a further 5 minutes


Add the passata, stock, balsamic and bring to the boil then simmer for around 30 minutes, add more water if the sauce gets too thick.
With about 10/15 minutes to go cook the pasta and whilst the pasta is cooking grab another pan and brown the chicken using frylight
Add all ingredients to your oven dish, top with cheese and bake for approx 20/30 minutes.
