Slimming World Friendly Cottage Pie

Flicking through my Food Optimising book I came across the photo of a delicious looking Cottage Pie, I immediately headed over to the Slimming World web page and searched for it!




You will need:
900g potatoes, peeled and chopped
Dried Herbs (to personal taste)
6 tbsp fat-free natural yogurt
250g frozen mixed veg
450g extra lean minced beef (less than 5% fat)
400g can chopped tomatoes
500ml Beef stock
1 egg, beaten




Preheat the oven to 200°C/Gas 6. Boil the potatoes in a large saucepan of lightly salted water for 15-20 minutes or until tender.
Meanwhile, whilst your potatoes are cooking grab another pan and stir fry the frozen veg for 5 minutes. 
Add the minced beef and cook for a further 5 minutes. 
Stir in the tomatoes, stock, and herbs, bring to the boil, then remove from the heat and transfer to a baking dish.
Your potatoes should now be ready so mash with the yogurt and herbs and top the meat mixture with it, brush with the beaten egg and 'spruce' up with a fork.
Oven cook for 30 minutes.
